Made with peanut butter, nuts & seeds, this sweet fudge is processed more slowly in the body, meaning you're less likely to experience a blood sugar spike & crash AND you'll be getting some longer-lasting energy.
Ingredients
8x8 baking pan
2 cups of semi sweet chocolate chips/chunks
1 cup peanut butter (I use smooth, all-natural)
1 tsp ground flax (optional... I add it for additional fibre & Omega-3s)
to mix in/sprinkle on top:
crushed walnuts
pumpkin seeds
the opportunities are endless here.... use whatever nuts or seeds you'd like!
Preparation
Grease 8x8 pan
On medium heat, stir together chocolate chunks & peanut butter until completely melted and blended
Pour into 8x8 pan
Sprinkle crushed nuts & seeds on top
Place in freezer to set for 30 mins
Store these in the fridge for consuming in the next few days, or, keep them in the freezer and grab one for a post-dinner snack (they thaw/soften in minutes!)
